RECIPE : caesar kale energy bowl

now guys, this is my new favourite salad. it's my caesar kale energy bowl, with apple, chickpeas, roasted sweet potato, and a tahini dressing with lime and coriander.it's a perfect lunch after a morning like mine : with a long, brisk morning walk in the sun by the sea. normally i would eat something a bit lighter for lunch, but this is perfect to get an energy boost after a morning workout.it's also a great dinner - with healthy fats from the tahini (sesame paste), carbs from the sweet potato and chickpeas, anti-inflammatory nutrients in the veg and fruit (great after moving those muscles), protein from the chickpeas and veg, as well as tons of fiber, vitamins and minerals.after eating this, you can almost hear your body thanking you ^^kalebowl2caesar kale energy bowl recipe:half a bowl full of kale, rinsed and roughly chopped1/2 large, or 1 small sweet potato, peeled and cubed1.5 dl (approx. 0.6 cup) chickpeas, boiled1/2 apple, julienned or shredded1/2 small red onion, slicedtahini dressing:1 tbsp tahini (sesame paste)1/4 lime, juice only1-2 cloves of garlic, finely choppedcoriander (cilantro), finely choppedwatersalt and white pepperinstructions:- pre-heat your oven to 225° C (about 430° F)- place the sweet potato cubes on a piece of parchment paper. sprinkle with salt and pepper and roast until soft, about 15-30 mins depending on size- massage the kale for a few minutes until softened. mix with the apple pieces (i usually squeeze some lemon juice over the apples to prevent them from browning. plus it's delicious), and place on one side of your bowl- add the chickpeas and sweet potato cubes in each corner. garnish with the red onion slices- for the dressing, simply mix tahini, lime juice, and garlic with a spoon while gradually adding water, until wanted consistency- add salt, white pepper and chopped fresh coriander (dried or frozen works well too) to taste- toss everything together and enjoy your bowl of pure happiness !kalebowl3cthis is what it looks like with that gorgeous garlicky tahini dressing all mixed in.kalebowl4cnow doesn't that look just heavenly ?if you try it out, let me know what you think !enjoy the sunny day (or whatever it is where you are)love // jenny
