HOW TO : easiest quick-pickled onions

if we all knew how easy it is to make healthy quick-pickled onions – our sandwiches, rice dishes and burgers would never be the same again. you basically only need 2 ingredients – onion and some sort of vinegar. then you can go crazy with spices and flavourings if you want. let me share the basic recipe with you ( if we can even call this a recipe ) and leave it up to you to go crazy with them spices.

basic quick-pickled onions
thinly sliced red onion ( however much you want )
your favourite vinegar ( enough to cover the onion slices )
salt, to taste

– add vinegar to a pot and bring to a boil. stir in salt, how much depends on how salty you like your pickles. i used about 1/2 tsp for a large jar.
– place the onion slices in a very clean glass jar and carefully pour the just-boiled vinegar over the slices. don’t burn yourself ! i like using apple cider vinegar.
– let cool completely, for at least about 30-60 minutes.
– will last for a few weeks, keep in the fridge.
