RECIPE : gluten-free wakame seaweed pancake with rainbow salad

oh my word. just look at this beauty. my recipe for wakame (seaweed) tasting gluten-free buckwheat pancake wrap, with light and fresh rainbow salad. healthy, easy, and gorgeous if i may say so myself ^^

wakame seaweed pancake with rainbow salad
wakame seaweed pancake
2 large or 3 small pancakes100 ml / 0.4 cups buckwheat flour
200 ml / 0.8 cups water
2 tbsp dried wakame, ground (find it in south east asian food shops,
or replace with grated beets, or finely chopped spinach/kale)
a sprinkle of sesame seeds
oil for frying

rainbow salad
1/8 purple cabbage head
1 large carrot
1 apple
1 scallion, sliced
a bunch of coriander
200 ml / 0.8 cups edamame beans, cooked
a sprinkle of sesame seeds

dressing
2 tsp ginger, grated
1-2 garlic cloves, minced or grated
2 tbsp light soy sauce, or tamari
juice from 1/4 lime
chilli flakes, as much as you dare

– mix the ground wakame and buckwheat flour. add the water a little at a time. whisk until lump-free, but don’t overdo it – buckwheat doesn’t like to be messed with too long
– let sit for 30 minutes
– thinly slice the cabbage, carrot and apple, or grate them in a food processor. add to a bowl and mix in scallion, coriander and edamame beans (young soy beans)
– mix dressing ingredients and pour over the salad. toss it ! garnish with a sprinkle of sesame seeds. i’m using black, but it’s completely optional
– heat a pan to medium heat, and add a tiny bit of oil to make it non-stick. pour in a super thin payer of the pancake batterand swirl it around. the thinner the better ! let fry on each side for about 6-8 minutes until properly cooked through. the seaweed makes the pancake take longer, so have patience
– place some of the salad in the pancakes and fold to a wrap. done !

p.s.
you can replace the seaweed with whatever veg, spice or herb you want. also the salad does great as a cole slaw with just a splash of my homemade soy yogurt, some garlic and salt & pepper, instead of the soy sauce dressing.
oh probably a good thing to mention : the seaweed makes these pancakes a bit umm… should we say sensitive ..? so prepare to get messy with rainbow salad all over the place !
