RECIPE : super salsa

comments 4

in this video i’m not only showing you how i make my crazy simple and zesty fresh salsa – one of my favourite snacks – i’m also talking a bit about making good habits and adjusting your tastebuds. this is an incredibly interesting subject in my opinion, both because it’s amazing how huge the change can be, and because it’s beyond strange how little we talk about it.

one of the healthiest snacks around, i can honestly say that when i have this salsa with my homemade corn & sesame crackers, i couldn’t any less be missing the cheese-covered nacho chips with store-bought salsa that i used to eat growing up. this is a flavour-explosion, at the same time as being a snack that will make you feel great and energised – instead of sluggish or tired.

this salsa is of course totally modifiable ! why not try adding corn kernels, avocado or pineapple ? or make it italian by using basil and capers, instead of coriander and black beans. my usual salsa doesn’t have beans, so that’s why this version is a ‘super’ salsa – to go with the super guacamole video we’ve got planned for this sunday !

super salsa
4 tomatoes, chopped
1 onion, chopped
1-2 garlic cloves, minced
1/2 red chili, chopped (or however much you prefer)
a bunch of coriander, chopped
250 ml / 1 cup cooked black beans
juice from 1/2 lime
salt & pepper, to taste

serving suggestion :
my gluten-free corn & sesame crisp bread (as seen in photos)

– in a large bowl, mix all ingredients and taste, adding more lime, coriander, chili, salt or pepper as needed.
– perfect served with my corn & sesame crisp bread / crackers. to make the batch you see in the photos, i just cut them into triangles, and used only white sesame seeds (instead of a mix of white and black) to keep them yellow and sort of nacho looking.
