RECIPE : watermelon summer salad

i could eat watermelon every day for the whole summer without getting bored. got nothing but love for the fresh pink juiciness ^^
here’s a recipe with a way to use watermelon in a salad as a complete meal. it’s perfect with the pink grapefruit and beet root, not to mention that little salty kick from the capers. it might just be the freshest thing you’ll eat all summer !

serve as is, or why not add some homemade soy yogurt if you’re in the mood for smooth creaminess.

watermelon summer salad
3 small beets, peeled and thinly sliced
1/4 small or 1/8 large watermelon, peeled and sliced
1/2 pink grapefruit, peeled and thinly sliced (optionally exchange for lemon or lime juice)
1/4 red onion, sliced
400 g / 1 can of chickpeas
a handful of basil
capers, to taste (i use a lot)
salt & pepper
chilli flakes

– place beets, watermelon and grape fruit in a bowl. add chickpeas and red onion and give it a toss
– top it off with capers, basil, chilli flakes, and salt & pepper. easy huh !
