VEGAN INSPO : hot for food | super guacamole

i’ve been longing to share this vegan inspo episode with you guys – meet our fellow youtubers lauren and john from the hot for food blog and youtube channel !

it’s so rare to find cooking shows or youtubers that put in that extra effort to make their videos stand out. not only caring about the content of the video, but also about the finish – how you package the information. and these two got that down to a t !
more inspirational videos are hard to find – and besides from being stellar editors, they’re also super funny and sweet hosts.

as if that wasn’t enough, they take gorgeous food pics of their inventive, and often surprisingly easy-to-make recipes. i love having hot for food in my instagram feed.

for this episode, i’m trying out their recipe for guacamole – or super guacamole to be exact – which is just absolutely brilliant. and it should of course be served with my super salsa, a match made in heaven !

hey guys, isn’t it weird that so many of the best vegan bloggers and youtubers are canadian ? what’s up with that ?

super guacamole
makes 2 cups
2 ripe avocados
1 lime, juiced
1/4 tsp cumin
1/8 tsp cayenne
1/4 tsp sea salt
1/4 tsp ground pepper
1/2 cup cooked black beans
1/2 cup frozen corn, thawed
1/4 cup red bell pepper, finely chopped
1/2 cup fresh coriander / cilantro, finely chopped

optional : crushed garlic, red onion instead of green onion, hot sauce instead of cayenne. (i added crushed garlic to mine.)

– remove the avocado flesh from the peel and mash in a bowl with a fork along with the lime juice, spices, sea salt and pepper. fold in the remaining ingredients and serve. (i served in baked sweet potatoes. killer combination !)
– if you’re not serving it right away : put the avocado pit in the middle of the bowl of guacamole to keep it from going brown and refrigerate.
