RECIPE : 2 min cold green peanut soup

this probably is the most quick & easy recipe i’ve ever posted. it’s the 2 minute green peanut soup – raw, vegan, and great both hot or cold. throw some peanuts in a blender. add water and whichever green veggies. blend. done. if this isn’t fast food then i don’t know.

i’m topping this soup with my homemade sauerkraut which adds a lovely freshness to the soup, and although i’m eating it cold in the vid, i’ve tried heating it up too and it works great. even though this is a very light dish, i’ve noticed that it keeps me full and happy for a surprisingly long time. i guess it’s because of all the good green nutrients my tummy’s working on processing after slurping this baby down.

2 min cold green peanut soup
2 small or 1 large serving
100 ml / 0.4 cups raw peanuts
500 ml / 2 cups water
1 cup broccoli, fresh or frozen
1 cup spinach, fresh or frozen
a handful of leek, sliced
1 garlic clove, chopped
1 tsp ginger, grated
a handful of basil
juice 1/8 lemon
black and white pepper
salt

– start by blending the peanuts to a fine powder (a few chunks left doesn’t matter though)
– add water and blend again
– add the rest of the ingredients and blend until smooth
– garnish with whatever toppings you like. i’m using my homemade sauerkraut and leek
