RECIPE : noodle bundles | + my exciting news finally revealed

this is it guys – i can finally reveal my exciting news, after keeping it a secret for almost 1 year.

noodle bundles with spicy pineapple sauce
about 12 bundles
for the bundles :
about 75 g / 2.6 ounces rice vermicelli, uncooked
1 large or 2 small portabello / cremini mushrooms, sliced quite thickly
about 100 g / 3.5 ounces green beans
1 garlic clove, minced
salt and pepper
2 tbsp gram flour / chickpea flour
2 tbsp water (or more)
1/4 tsp sichuan pepper, or black pepper

for the spicy pineapple dipping sauce :
200 ml / 0-8 cups pineapple, diced
juice from 1/2 lime
2 tsp koriander, chopped
1/4 – 1/2 red chili, chopped

– cook the vermicelli according to the package
– sautee the mushroom, green beans and garlic in a little bit of water, with salt and pepper, until the beans and mushrooms have softened. you can cut the beans in half if they’re too long
– mix gram flour with sichuan pepper and water. add more water if the batter is too thick
– twirl a handful of noodles around a slice of mushrooms and a couple of beans, and brush the bundle with some gram flour batter all around. repeat until all bundles are done
– mix pineapple, lime juice and koriander until smooth in a blender or food processor. add chopped chili
– fry the bundles in a nonstick pan, with a little bit of oil, for about 4 minutes of each side or until golden browned, on medium high heat

  2. Congratulations Jenny!!!!!! :D :D :D This was well deserved, I would totally go and buy the book when it comes out in English! Looking forward to seeing it in major bookstores hopefully! I’m wondering if you could you recommend a substitute for mushrooms in this recipe? Although long beans wrapped in vermicelli alone would probably be delish as well!

  7. I just made that recipe, soooo good!!! Did not have any mushroom so I made it with carrots and bean instead. It was easier to make than I though, everything hold well together with the chickpea flour. Very good!
    I live in Seattle and I discovered you recently. Love your style! Cannot wait to get your cooking book, we need it in English! :)

  9. I found you today quite by accident at Youtube, but girl, am I happy with it! I just realized I must be a minimalist by personality and even if I need to let the idea and my thoughts sink in for a while, I believe this might just explain a lot of things in my life, both positive (the minimalism already implemented, which bring me comfort and hapiness) and negative (the areas in which I have not yet implemented minimalism, and that are bothering me). As for the book, an English version PLEASE! Have you considered using the print on demand options given by Amazon? Could be a way to start feeding your English language readers. Tack sa micket for sharing all that you do! :)

  10. Your cookbook looks amazing! And not only vegan, but mostly gluten-free and without sugar…! You can’t imagine how hard I’ve been searching for a good cookbook like this… not just vegan, gluten-free and no sugar (white sugar), but that also looks good, has beautiful pictures and a great design. (most cookbooks I’ve found in this line doesn’t look so great in the layout part).

    I’m extremely looking forward to when New Vegan is available in English… please publish it in English!
