RECIPE : vegan instant ramen in a jar | the edgy veg recipe swap

yay another recipe swap !
it’s one of my favourite types of videos / blog posts to make, and this time was no exception ^^

because today i’m swapping with brilliant candice from youtube channel the edgy veg !
candice is the best, she’s such a sweet and funny person – and her recipes are always inventive and makes my mouth water each time, oh gosh. she makes a lot of comfort food and veganizes dishes from your favourite fast food places – so you don’t have to miss out just because you’re going vegan !

the recipe i’m making today is for instant ramen in a jar – and it’s just too good !
i’m so glad me and david decided to go with this one, it’s so fun and delicious. and cute too right ?

instant ramen in a jar
original recipe + video by the edgy veg )
serves 1
1 portion par-cooked, egg-free ramen noodles ( as much as you want really )
about 1 tbsp miso paste ( or organic, palm-oil free buillon )
1 tsp sesame seeds, toasted
about 1-2 tsp tamari / light soy sauce
0.5 small carrot, julienned
a small handful green beans, lightly cooked
2-3 cremini or shiitake mushrooms, sliced and lightly sauteed
0.5-1 spring onion, sliced
0.5-1 tsp grated ginger
1 garlic clove, minced
1 tsp dried wakame seaweed ( optional )
1 tbsp chili sauce ( optional, i used my homemade, use good quality store-bought, or hot sauce )
1 slice of lime ( optional )

– add all the ingredients to a jar ( mine is about 750 ml / 3 cups ), using noodles that had been cooked for about half the cooking time, to not make them soggy. screw on the lid and keep in the fridge for up to about 4 days.
– to serve, remove the lime, and simply add enough freshly boiled water to cover all ingredients. stir and let sit for a few minutes before digging in – and don’t forget that squeeze of lime !
