3 THINGS : healthy vegan snacks

as requested – this week’s video is all about healthy snacking !
3 recipes for easy vegan snacks for when you’ve got those late night cravings for a treat. so put down that chocolate bar and try one of these instead ^^

  • edamame beans

  • 3 big handfuls of edamame beans

  • 1 tbsp nutritional yeast

  • 1 large pinch of sea salt

  • 1/2 - 1 tsp dried garlic

  • 1 tsp of sesame seeds

if steaming :

place edamame beans in steamer basket over boiling water. give the basket a good shake after a minute or two. wait a couple of minutes more and try one of the edamames in the middle of the basket (careful not to burn yourself). if hot right through, remove from heat and sprinkle with the remaining ingredients. or just with salt is nice too !

if boiling :

place edamame beans in a pot and add just enough water to cover the beans. bring to a boil and remove from heat. pour out the water and sprinkle the beans with the remaining ingredients.

note :

the edamame bean pods are very tough and not meant to be eaten. just pop out the little yummy beans on the inside of the pods. delicious !

  • melon salad

  • 1/4 small melon (1/8 if using water melon), sliced or diced

  • 1/2 small onion, sliced

  • a small handful of pickled gherkin slices (without sugar or junk), can be replaced with capers

  • a pinch of sea salt

  • a squeeze of lime juice (optional)

  • few leaves of lemon balm (optional)

place the melon chunks, onion and gherkin slices on a plate. sprinkle with sea salt. add optional lime juice and lemon balm leaves. done !

  • peanutty apples

  • 1 large apple

  • 2-3 tbsp of peanut butter

add peanut butter (preferably room temperatured) to a small bowl. slice the apple thinly and place the slices in the peanut butter. dip !

variation : try squeezing some lemon juice or sprinkling a pinch of cinnamon on top of the apple slices.
