RECIPE : chocolate tofu mousse with cinnamon puffs

it’s already time for the second part of my new vegan cookbook video extravaganza !
1 video every 2 days for two whole weeks – who’s popping popcorn ?

in this video i’m making a silky creamy chocolate mousse out of tofu, with some sweet cinnamon rice puffs and fresh fruit. doesn’t it look completely kawaii served in recycled glass jars like these ?

chocolate tofu mousse with cinnamon puffs
2 large or 4 small servings

tofu mousse :
300 g silken tofu
100 ml / 0.4 cup mango, diced
2 tbsp peanut butter
50-100 ml / 0.2 – 0.4 cup cacao, or unsweetened cocoa powder
1–2 tbsp agave syrup
a pinch of chilli flakes (optional)

cinnamon puffs :
1 tbsp agave syrup
1/2 tsp cinnamon
200 ml / 0.8 cup puffed rice

serving suggestion :
100 ml / 0.4 cup ananas, dice
2 passion fruits

– mix all ingredients for the mousse in a food processor or blender. let sit in the fridge for at least 30 minutes, but preferably 1 hour.
– preheat the oven to 75°C / 170°F.
– mix the agave syrup and cinnamon in a bowl. fold in the puffed rice and spread the mix evenly on a parchment paper. toast in the oven for about 20-25 minutes, stirring after half that time.
– place the mousse in 4 glasses or jars. use a piping bag or a plastic bag with a cutoff corner, if you want to avoid getting all messy. top with cinnamon puffs.
– great served with fruits and berries. here pineapple and passion fruit.
