RECIPE : fablunch's green goodness detox salad

the recipe in today’s video is my own mexican style version of fablunch’s green goodness detox salad, which basically is a kale salad with a creamy tahini dressing. in the video, i’m making a dressing batch that can be kept in the fridge to go with a few of my salads for the coming week or so. have a look :

and oh, i’m making my salad and dressing in my new fablunch containers. i wanted to tell you guys about them because except for being quite brilliant (i looove that you can fold them into half they’re size, and that they’re in a soft silicon instead of hard plastic), they’re sold for such a good cause. for every container fablunch sells, 10 school lunches will be served to children in need. sweet right ?

  • now for the recipe of my version of fablunch's green goodness detox salad :

  • 3 large handfuls of kale, rinsed and roughly chopped

  • a pinch of sea salt

  • 1/2 small onion, sliced

  • 1/2 can (1.5-2 dl) black beans

  • 5 cherry tomatoes or 1 salad tomato, sliced

  • 1 large handful of cucumber slices

  • 1/2 banana, sliced

  • tahini dressing:

  • 1 dl (ca 1/2 cup) tahini (sesame paste)

  • juice from 1/2 lime

  • water

  • 2 garlic cloves, minced

  • a bunch of coriander/cilantro, chopped

  • salt and pepper

add the kale to a bowl and massage it with a pinch of sea salt for a few minutes.

mix in the rest of the salad ingredients, or make a cute pattern with the cucumber and banana slices on top ^^

for the dressing : mix tahini and lime juice, and gradually add in the water until wanted consistency.

add garlic, coriander/cilantro, salt and pepper. done !

keep in fridge in an airtight container for up to 2 weeks.
