RECIPE : holiday salad | staying healthy through the holidays

this here is the last video we shot in the apartment before we moved out 3 weeks ago. it feels a bit sad almost.we wanted to save this video a bit since it's about winter holidays. but november is knocking on the door so let's get these winter-themed videos rolling !https://www.youtube.com/watch?v=_FtDaTbllE4this salad is so yummy, fresh, crispy and flavourful that it will brighten up any buffet - no matter which country you're from or which holiday you're celebrating ! it can be varied a thousand different ways to suit your smorgasbord, or why not - like me and david - add some tahini dressing and serve it as a beautifully colourful dinner in itself ?with this salad on my holiday buffet table, i'm making sure to have some of my normally nutrient-dense food together with all them holiday goodies - yummy stuff, but perhaps not the most vitamin-packed if you know what i mean ^^jennymustardholidaysalad5jennymustardholidaysalad3holiday salad1 green apple, juliennedjuice from 1/2 lemon1 small head of cauliflower, cut into florets2 garlic cloves, finely chopped1/2 tsp turmericsalt & black pepperwater200 g / 7 oz kale, torn into bite-sized pieces1/2 red onion, sliced400 ml / 1.7 cups green beans, steamed or lightly boiled until al dente120 ml / 0.5 cup hazelnuts, roughly choppedlemon wedges for garnish- place the julienned or thinly sliced apple pieces in a bowl and squeeze the juice from 1/2 lemon over them. give them a toss to cover all pieces, this will keep the apple from browning and give them a nice zesty flavour of course.- place the cauliflower florets and chopped garlic in a pan and season with turmeric, salt and pepper. add a splash of water and sauté for about five or so minutes on quite high heat until softened, but still al dente, making sure not to overcook !- in a huge bowl, sprinkle the kale with a pinch of salt and massage for a few minutes, until soft and deeper green.- add red onion slices, green beans, and apple pieces, and mix.- push the salad outwards to the edges of the bowl, creating a hole in the middle. place the cauliflower in the middle, and top with hazelnuts and lemon wedges. this is pure love in a bowl !jennymustardholidaysalad2what winter holiday do you celebrate ? would love to hear about your winter food traditions !more salad !watermelon1small rodbetssallad midsummerpotatosalad2small love // jenny____p.s. make sure to never miss a post – follow me on bloglovin’ !
