HOW TO : green curry paste

we’re moving on quickly – here’s already episode 3 of my new vegan cookbook video extravaganza !

did you know that making your own green curry paste is surprisingly easy ? and if you can’t find some of the ingredients where you live, they’re quite easily replaceable. oh and in the next video in just 2 days, i’ll be making a gorgeous spinach & tofu green curry using this paste – so check in again then !

green curry paste
4–5 green chillis, seeds removed and chopped
1 shallot, chopped
1 large bunch of fresh coriander
4 cloves of garlic, chopped
2 lemon grass stalks, sliced
1 thumb ginger, grated
1/2 thumb galangal, grated (optional, if you can find it)
1 lime, zest and juice
1 tbsp tamari or light soy sauce
1/2 tsp dried kaffir lime leaves, or 2 fresh leaves, or juice and zest from 1 more lime
1 tsp ground coriander
1 tsp cumin
1 tsp peppercorns, black and white

– place all ingredients in a mortar or bowl. mix until smooth in the mortar or with a hand mixer.
– keep in the fridge in a thoroughly cleaned glass jar. will stay fresh for a couple of weeks.

i’ve been getting a lot of questions about the english translation of the cookbook !
to be clear : it’s unfortunately not up to me whether it gets published in any other language.  it’s my swedish publisher who will try to sell it to publishers in other countries, so we’ll just have to wait and see if anyone picks it up.
