RECIPE : 2 layer raw vegan fudge

oh my goodness you guys. our freezer is filled with these babies, and i’m not sure they’ll even last the weekend before me and david have devoured them all…

this is a deluxe version of the 2 ingredient raw vegan fudge video from last spring, remember ?
i just improvised and made one layer of dark earthy chocolate walnut, and one layer a lemon coconut layer that will sing in your mouth.

as you hear i’m quite happy with these.

they’re so dark and powerful that i don’t need more than one or two tiny pieces to feel completely satisfied. they’re sort of overwhelming your taste buds a little bit, so you can’t really eat that many. and they’re so filled with good fats that this makes for a dessert your body will be happy you ate.

if you don’t want to make it double layered, just choose one of the flavourings and double those ingredients.

2 layer raw vegan fudge
250 ml / 1 cup cashew nuts ( about 140g )
250 ml / 1 cup pitted dates ( about 185g )
2 tbsp cacao powder ( make it raw for a completely raw dessert )
a handful of walnuts
3 tbsp shredded coconut
zest from 1/2 – 1 lemon
walnuts and cacao powder for garnish ( optional )

– mix the cashews and dates in a high-speed blender or food processor until smooth. it takes about 10-15 minutes depending on your machine. stop and use a spoon to scrape the sides once in a while. the heat from the machine will sort of melt the nuts and make them creamy.
– remove half of the mix and place in a bowl for now. add cacao and walnuts to the remaining half and blend very quickly until the walnuts are a bit broken up, but not completely mushed. stir with a spoon to make sure the cacao is evenly mixed in. place the mix in a glass or porcelain dish and press down with your fingers to make it dense. put the dish in the freezer for now.
– clean the blender / food processor and add the remaining half of the cashew mixture, with lemon zest and shredded coconut. blend until mixed. take the dish out of the freezer and add the lemon coconut layer on top of the chocolate layer. press down with your fingers to make the two layers stick together. place back in the freezer for a couple of hours, until firm.
– garnish the fudge with some cacao powder and walnut pieces if you want, and cut into even squares, size is up to you ! keep in freezer and take out a few pieces when that sweet tooth gets a craving.

ok back to enjoying berlin now – we’re having a day off, going to a huge asian supermarket !
we need some new bowls and stuff since we haven’t shipped our stuff from sweden yet ^^
