RECIPE : creamy cremini one-pot pasta | my romantic vegan dinner for david

hope you’ve got some lovely romantic treat planned for today – no matter how you’re celebrating or who you’re celebrating with.

as a finale to the romance week here on the blog, i cooked a romantic dinner for david – one-pot pasta, strawberries, champagne – the whole shebang !
here’s what it looked like :

creamy cremini & broccoli one-pot pasta
serves 2
2-3 garlic cloves, finely chopped
5-8 cremini mushrooms, quartered ( depending on size )
2 tbsp tahini
500-750 ml / 2-3 cups unsweetened plant milk ( like oat or soy )
200 g whole wheat spaghetti ( or whichever pasta you prefer )
half a broccoli, cut into florets
salt & white pepper, to taste
1-2 tbsp white miso paste ( or palm-oil free, organic buillon )
2 tbsp nutritional yeast ( optional )

serving suggestion :
fresh basil, lemon juice, black pepper, chili flakes

– in a pot, sautée the garlic and mushrooms in tahini for a quick minute. add salt & white pepper to taste, and a splash of water if needed.
– pour 500 ml / 2 cups of the plant milk in the pot and bring to a boil, then add the pasta ( and buillon if using instead of miso ). simmer without a lid for half the cooking time suggested on the pasta package, stirring frequently.
– fold in the broccoli florets and add more milk if needed. simmer under lid until the pasta is al dente, stirring and checking if more liquid is needed frequently. remove from heat, mix in the miso and nutritional yeast ( if using ). give it a taste and add more salt and pepper if needed.
– serve hot. delicious with fresh basil, chili, black pepper, and a squeeze of lemon juice. up the romance by serving both portions on a huge plate lady and the tramp style.
