RECIPE : spicy sesame kale chips | oil-free

this is a video we made almost exactly one year ago. little did we know back then, that just a few weeks later i’d sign a contract for my very first cookbook !
so this is one of the recipes in the book, i used to have them all the time last year. but for some reason i’ve totally forgotten that this was my go to snack ( i’m blaming those delicious edamame beans ).

to celebrate a happy reunion, i’m totally making these this weekend. have you ever tried kale chips ? if so, what do you think ?

let’s just say it : one of the best snacks ever !
vegan, whole foods, oil-free, super flavourful and ridiculously good for you. and quite cute to serve them in parchment paper bags like this right ?

kale chips
200 g kale
1/2 tbsp light soy sauce / tamari
1/2 tbsp freshly squeezed lemon juice
1 tsp sesame seeds
1 tsp chili flakes (or 1/2 tsp if you want them less spicy)

– preheat the oven to 225°C / 440°F.
– rinse the kale and let it dry. remove leafs from stems in suitably sized pieces.
– place in a bowl and add soy sauce, lemon juice, chili, and sesame seeds. massage the kale for about 3-5 mins.
– place the kale pieces evenly on a parchment paper covered oven tray
– bake for about 5 min. they burn very easily so keep an eye on them every minute. they should be mostly green, with browned edges, and crispy when done.
– enjoy the ( probably ) healthiest snack ever invented !

oh man, i’m starting to crave these really bad now. might not be able to wait till the weekend..!
